Favorite Slow Cooker Recipes

With the crisp air of fall, comes countless more enjoyable things. Such as the color change of the leaves, Halloween approaching and cool evening strolls. One thing that seems to go hand in hand with fall is slow cooker meals. There’s something about the changing of the seasons and the cooler weather that just screams invitation to dust off the slow cooker from where it’s been hiding all summer. Slow cooker meals are incredibly convenient and probably not utilized enough. Pop some ingredients in that morning before your weekend day trip, and you have a delicious meal waiting for you when you get home. Opening the door to the flooding aroma of something waiting in the slow cooker is a perfect ending to a great day of adventures. Here are some favorite slow cooker recipes you can try at home.

Slow Cooker Broccoli Cheese Soup

This recipe involves a little more prep than the others but the end result is worth it.broccoli

Ingredients

1 chopped yellow onion 2 cloves minced garlic or 1Tbsp of garlic powder 6Tbsp all-purpose flour Salt and Pepper to taste 2 (12oz) cans evaporated milk 5 cups low sodium chicken broth 5 cups chopped broccoli 1/8 tsp dried thyme ½ cup heavy cream 12oz shredded sharp cheddar cheese 2oz parmesan cheese-finely shredded is preferred

1. Sauté the onion in butter in a large skillet over medium heat until soft. This usually takes 3-4 minutes. Add the garlic, flour, salt and pepper and cook for 2 minutes, constantly stirring. 2. While whisking, add the evaporated milk slowly. Continue stirring until it thickens. 3. Once it thickens, pour it into the slow cooker adding the chicken broth, thyme, and broccoli. 4. Cook on High 2-2 ½ hours or Low for 6 hours. 5. Once the chosen time is up, stir the cream and cheese in and serve!

Accompany a cup with a baked potato or grilled sandwich for some added tastiness.

BBQ Pulled Pork Sandwiches

With very few ingredients, this is a great option for dinner.bbqsandwhich

Ingredients

1 6-8lb pork shoulder 1Tbs worcestershire sauce 1Tbs garlic powder 1 onion soup mix 1 bottle BBQ sauce Salt and pepper to taste

 1. Mix worcestershire, garlic powder and BBQ sauce in a bowl. 2. Trim large chunks of fat and skin from the pork shoulder. Keeping some fat attached will help prevent the pork from drying out (I usually do this the night before). 3. Rub the onion mix on the pork and place in the slow cooker. Pour sauce into crock-pot slowly, to avoid removing the rub from the pork. 4. Cook on low for 8-10 hours. 5. Once cooked, remove pork from the slow cooker and shred with two forks. This is easiest if done in small chunks at a time. Pick off the remaining chunks of fat as you find them. 6. Place shredded pork back into slow cooker and mix with remaining sauce. 7. Cook on high an additional 20 minutes (optional) 8. Serve on rolls topped with more BBQ sauce and enjoy!

What’s great about this recipe is you can leave the pork cooking up to 12 hours if you find yourself stuck in the returning mountain traffic!

Pumpkin Pie Pudding

This is a perfect, easy addition for a pot-luck or just a yummy dessert at home.

Ingredients

1 (15oz) can of pumpkinpumpkin cut in half or 2 (1/2lb) pie pumpkins pureed   1 (12oz) can evaporated milk ¾ cup sugar ½ cup biscuit/baking mix (pancake mix will do) 2 eggs, beaten 2Tbs melted butter 2 ½ tsp pumpkin spice 2 tsp vanilla Whipped cream

1. Mix all ingredients together in a bowl. Spray slow cooker with non-stick cooking spray and transfer mix to slow cooker. 2. Cover and cook on low for 6-7 hours. 3. Serve with whipped cream and indulge!
